In developing this web site an aim has come to the forefront. That aim is basically to find the 'perfect mix'. Whether your drink is bourbon & cola or gin & tonic, no one likes a poor mix.
Some of the biggest and most expensive bars in Melbourne use post mix cola... a pretty poor substitute, especially if you order a better base spirit such as Jack Daniels. While not all post mix is bad, it can vary dramatically from bar to bar and even within a single night! I think it's appalling when I pay good money for a bourbon & coke and get something like a bourbon & soda.
It is not just post mix that is done poorly, one bar, not yet featured on this site, somehow manages to pour every mixed drink with warm, flat mixers from a bottle! I even once saw the owner shake a bottle of Coke to see if it was flat! Well if it wasn't flat then, it is now...
There are loads of bad practices behind the bar, many of which are competely unseen or hidden from most people. Simple things such as unclean glasses or mis-poured beers. Pouring techniques are not just for Stouts or dark ales.
Our reviews take all of these things into account. We want to find the very best bars in Melbourne.
